Changing to be healthier, sexier, leaner, faster & stronger is pretty easy when you follow basic REAL food tips & general guidelines.  There is a common belief that losing weight & feeling better is hard & that “diets” & no fun restrictions are a must (I thought the same thing when losing my 84 pounds… frankly, losing 84 pounds sucked, hurt, was hard & did not feel good!) Well, I think now, that is pretty unnecessary & a waste of some very useful belief points : )

My tip… ALL YOU HAVE TO DO IS CHANGE JUST ONE THING & MAKE IT BETTER! Thats it! (This is my challenge for all my boot camp participants.  Can you handle this simple challenge?)  I promise ALL campers that take this challenge… their body, mind & health will be completely different & better at the end of any 4 week NDBC program!  IT’S TRUE!

Going Green in the Kitchen

I am a carnivore to the core, but it doesn’t mean I can’t appreciate what Mother Earth does. When preparing my meals, I make a strong effort to make sure my plate is a little more than meat and potatoes….I need a little green.

brussel_sproutsI have found  SIMPLE, REAL vegetables that are easy to prepare and meet my color requirements before digging into dinner.

One of them being BRUSSEL SPROUTS! This tiny cabbage like vegetable is packed with vitamin C and is delicious when roasted slightly al denté. To prepare, I cut the bottoms off and discard, then I cut a sliver of the tops off and toss sprouts and tops into a bowl. From there, toss the sprouts in olive oil, garlic, salt, pepper (and if I am feeling fancy-a little rosemary or herbs de provence). Spread coated sprouts onto a baking sheet and bake in the oven at 425 degrees for 20-30 minutes, depending on your oven. They should come out cooked, but crisp.

My other no-fuss favorite is roasted ASPARAGUS. Simply cut the white ends off the asparagus spears,  lightly grease your baking sheet with olive oil then brush olive oil onto the spears. Dust lightly with salt and pepper, bake at 350 degrees for about 15-20 minutes for skinny asparagus spears, about 30 for thicker ones. Feeling like your asparagus needs a little inspiration? Sprinkle FRESH grated reggiano or parmesean cheese.

These two simple REAL foods can help you get the NUTRIENTS YOUR BODY NEEDS and give your plate a little boost in color!

Fall Time is Pumpkin and Squash Time!

I love the warm days and crisp cool nights that Fall brings along with its harvest. In my real food effort, I decided that in honor of the weather and in my continued effort to keep it REAL, some sweet squash was going down in my kitchen tonight. Real food, with real ingredients!

I have tons of cookbooks from many of the masters like Chicago’s Charlie Trotter, the East Coast’s Ina Garten, and Boston’s Todd English-all of which encourage the use of REAL ingredients. I really do like to cook, but I rarely have the time to make an attempt to replicate their tasty culinary soirée’s. Tonight would be an exception. I turned off the TV, plugged in the iPod and began in an attempt to master a Trotter cuisine—Sweet Dumpling Squash Soup with Crispy Squash Pieces which is served inside the squash. Sweet dumpling squash was nowhere to be found, so I substituted acorn squash instead. The recipe also called for a Spanish onion–I used a sweet vidalia.

Sorry Charlie, but I had to adapt. And despite my refusal to follow your every move, it was still tasty!

Motivation Through Inspiration – by Jen B.

Inspiration comes in many forms. As I am about to finish my first week of my second month of boot camp (it’s that good!), I noticed something today as I was getting dressed. When I buckled my belt, I needed to buckle it in one hole. My inspiration today was noticing my waistline is a little smaller.

tight_beltAs I mentioned before, I am refusing to hop on the scale and I haven’t been measuring myself (although I probably should at least do that). I have simply been focusing on making it to bootcamp three times a week and making better food choices.

This month has been challenging. I moved into our new home and picked up a new client the weekend before my first day of boot camp. So I have been making an effort to keep up my normal schedule, fit in my new client, unpack, reorganize, show up to boot camp, and make better choices in my diet. In the beginning, it was difficult figuring how I could fit everything in while all of my belongings were in disarray. The first week of class I was tired and sore from the workout, but I stuck it out.

During the third week, a classmate showed up with a plastic air cast on her leg. She had injured her ankle the night before, but decided to show up to boot camp anyway. Instead of focusing on her injury and what she couldn’t do, she came anyway and focused on her strengths. While we did squats, she did curls. I am not sure if she knows it, but she was a huge inspiration to me in my momentary moving/reorganizing my life chaos.

Yesterday morning, as my 5:45 alarm went off. I struggled to get out of bed, I had worked late the night before and didn’t crawl into bed until way after midnight. Then, I thought of the girl who inspired me last week, got dressed, and went to boot camp. Within 15 minutes of walking through the door, I was awake, laughing and motivated to kick off the day.
