Fall Time is Pumpkin and Squash Time!

I love the warm days and crisp cool nights that Fall brings along with its harvest. In my real food effort, I decided that in honor of the weather and in my continued effort to keep it REAL, some sweet squash was going down in my kitchen tonight. Real food, with real ingredients!

I have tons of cookbooks from many of the masters like Chicago’s Charlie Trotter, the East Coast’s Ina Garten, and Boston’s Todd English-all of which encourage the use of REAL ingredients. I really do like to cook, but I rarely have the time to make an attempt to replicate their tasty culinary soirée’s. Tonight would be an exception. I turned off the TV, plugged in the iPod and began in an attempt to master a Trotter cuisine—Sweet Dumpling Squash Soup with Crispy Squash Pieces which is served inside the squash. Sweet dumpling squash was nowhere to be found, so I substituted acorn squash instead. The recipe also called for a Spanish onion–I used a sweet vidalia.

Sorry Charlie, but I had to adapt. And despite my refusal to follow your every move, it was still tasty!
